Cut one package of FIRM TOFU (This makes it easier to work with than soft tofu because it doesn't break as easily) into cubes
Pat the Tofu dry so it isn't too wet from the package
Put the tofu in a bowl with some sweet potato starch (add more starch when needed) and toss the tofu in the bowl so it's evenly coated with the starch (This is the perk of using extra firm tofu so when you toss it around in the bowl it won't break apart)
I don't want to waste oil deep frying so i add some oil in a pan about 1/4 in deep and heat it up with the white part of the green onion and 2 TB of minced garlic
When the Garlic and Green Onion turns brown add in the tofu and fry it to a golden brown on all sides.
** be patient while frying the tofu don't try to 'rush' it trust me-- i've been there and you don't want to get into that situation it just makes a mess. my recommendation is to fry it on medium heat frying each side of the tofu for about 30 seconds
I took out the tofu (without the oil) and placed in on a plate while poured out the excess oil from the pan when the tofu is done frying.
I didn't wash the pan or anything so there is still some oil left. I add in the green parts of the green onion and the jalapenos and fried that for about 30 seconds
Now I add the tofu back in and pan fried it for about 2 minutes with about 1 TB of chili powder, 1 TB of black pepper, 2 TSP of Salt. (Up to you to season it to your taste)
