Spicy Italian Herb Chicken
- Marinate the Chicken in 1 TB of olive oil, 1 TSP Salt, 1 TSP Pepper, 1 TSP Lemon Juice, 2 TB Oregano for about 15 minutes.
- In a pan, spray with cooking spray and saute the onions and garlic for about 1-2 minutes.
- Lower heat to medium-low and grill the chicken slowly so the meat won't be tough for about 15 minutes, supervising it so the chicken is being cooked on both sides.
- After the chicken is cooked thoroughly, add in the Jalapeno slices and additional Red Pepper Flakes if you like it spicier. Season with additional salt and pepper to taste and garnish with lemon juice and serve.
